Avocado Toast, The California State Toast

We've declared this the State Toast of California. If you live here, like us, you should learn how to make it at home—it's still okay to claim you can't believe avocado toast is still a fixture on every menu when you're in public. If you want to pretend it's 2018, or have family visiting from New Hampshire who've never had a fresh avocado before, this toast's for you.
Serves 2
Ingredients
- 1 tablespoon butter
- 2 thick slices of country loaf bread
- 1 avocado
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt
- Pepper
- Garlic crème fraîche
- Thinly sliced pickled peppers such as Fresno or Jalapeño
- 1 lemon zested
- 2 poached egg (optional)
- Feta cheese, garnish
Garlic Crème Fraîche
- 3 cloves of garlic, grated
- 1/2 of a shallot, finely chopped
- 1 tablespoons lemon juice
- Sea salt
- 1/2 cup crème fraîche
Butter each slice with your desired slathering of butter, or olive oil.
While the bread is toasting cut the avocado in half and remove the pit. Place into a bowl along with the olive oil and lemon juice. Mash with a fork to incorporate. Season with salt and pepper to taste.
Combine the ingredients for the garlic crème fraîche, mix well, and spread across each slice of toast. Spoon and spread the avocado mix across each slice, filling the crumb. Garnish with pickled hot peppers. Zest lemon over top with added salt and cracked pepper. Mother's Day? Anniversary? Birthday? Sunday? Top with a poached egg.
